We've decided not to fix our printer after the latest white ink failure. We don't do enough volume to warrant the $3,000 fix, which would be our second since the warranty expired. I don't want to damage the machine any further so I want to make sure I'm not missing anything in my conversion.

Basically, I'm going to insert cleaning cartridges where the white cartridges and go from there with the usual maintenance alerts / schedule. Are there any other things I should be doing to ensure that the printer will at least keep printing CMYK?

I think you still have chance to fix this if this happened few days ago.
Menu-> Maintenance Menu-> Replace White
After the replace white, clean the suction cap and do some medium cleaning on CL channels few hours later. Let the cleaning solution soak in overnight. Do this for another day and if you see the white ink on the suction cap, do perform "Replace white" again.
Call me at 215-634-7284 for any help.

Are you sure it's safe to do Head Cleaning on CL channels? Epson's manual does not mention it should be done, as far as I know. However I know the panel does allow you do it. I was once told by an Epson support guy that it would screw up the print head. I can't say for sure if he's being evasive
