when pictures are done in grayscale, do screenprinters still need to do color seperations.
This would depend on the printer and the style you want. Not all print shops handle separations or output film, but most do, if you just want a 1 color halftone print they should be able to output directly to a rip without needing to do much digital work to you file.
If you want a multi color print (Index or Simulated process) to capture more tones and detail then you would need the design separated.

If you're looking for perfect gradients, you'll probably be better off with direct to garment printing. If that is not an option, then you'll probably get the best results with a dense screen and half-tones. The Adobe products can help with half-tones and color separation.
