What are the settings you are using in the driver? Most of the times I have used a GT-361 printer, it prints the white underbase in pass #1... then prints the white highlight and color layers in pass #2. If you push the sliders to the max (which I have not done), it could very well do things in 3 passes.
On a side note, I have also seen it do two passes on a GT-381 on small designs. This was to allow more time for the white to gel with the pretreat before the color layer was printed.
