How do you outline a word to look like the varsity font. (a space between the letter and the outline)

Make a duplicate, give the text on top a fill + white outline, then give the text below a slightly larger outline with a contrasting color.

How do you outline a word to look like the varsity font. (a space between the letter and the outline)

I use the Contour tool. Set it for 2 contours, set the width. You can break them apart from the text and ungroup them to move or off set them.
