After some research I've learnt that cotton is best pressed or ironed at 180-200 degrees celcius to break down the polymer bonds in order to flatten them.

What has made me question using 180 or beyond, is if the t-shirts are pre-treated. The recommended temp for drying the pretreatment is 165 and I fear going past this will cause crystallisation..

Does anyone have any knowledge on the matter? Am I being paranoid or too meticulous?

A high temperature like that can cause your pretreat to stain. Instead, try using a paintbrush to brush the fibers in one direction while the pretreatment is still wet.
