So kind of annoying but the ink LED's for the white ink cartridges come on every few prints. Not always all at once, sometimes its one, sometimes two. I have to take them out shake them, put them back. This happens even after repulling white ink into the cartridges.

Is this normal? Whats the cause, how to I get it to stop doing that? Or is this just the norm for a T-Jet 2?

This is normal. Think about it this way the Epson doesn't know that there is an external ink system feeding ink into the cartridges it is programmed to think that it just has regular ink cartridges. With the amount of white ink that you print those cartridges would run out quickly so it's telling you to replace them. This can be annoying but there is no way around it. Also you don't have to shake the cartridges. This will just create air bubbles. Just pop them out and back in quickly to get the printer going. :)

I though that's what the chip on the back of the cart was for so the printer could read what the levels were

I will not shake anymore

Well technically it reads if there is a cartridge installed but the Epson starts off at 100% ink level when the ink light is reset and then decreases down depending on how much ink your using and even head cleanings. Then it flashes to warn you that the ink is low and once it's solid it's down to zero % and thinks it's out of ink.
