How would you print this?

I have a customer that wants to print something similar to these pictures. Would you print this in 4 color process with spot gray and highlight white. Any information will help.

I would do this process. Gray for the underbase, 80% for the base and 100% for the highlight gray areas, and highlight white. I can only do 6 screens. You definitely need an underbase. God Bless.

simulated process and/or index would be ideal.
If the budget doesn't allow for multi color prints (6+ screens minimum) then i would suggest CMYK process the way oleJobe suggested.
