My nephew is a good sized fellow and normal v-neck hoodies are too tight he says. He wants a hooded sweatshirt that isn't so tight at the neck. Any ideas on who carries something like this or what style I might want to search for?

I would go with a Zip up. You can find them at most wholesalers.

Check with San Mars brand Port and Company they seem stretchy
