So I picked up a Silhouette Cameo 3 and an Epson Workforce WF-7210. The Cameo says that it will print up to 12x12 but I have not been able to get it to do so. The printer is capable of something like 13x19 but I can't get the Cameo to print larger than 8.5x11. Is there a setting or some trick that I'm missing? I've seen people say to put the cameo on "current printer" but even when I do that, no luck.

You're not printing from the Cameo, you're printing from the Silhouette Studio software and its printing capabilities are limited.

Yeah, the Cameo is a cutter, not a printer. Being a cutter, it will cut up to 12" wide. The maximum size you can print is determined by your printer. I think you may be getting confused with integrated printer/cutters, such as the Roland BN-20.
