I don't know what happened, by Photoshop settings are the same. But lately my colors are significantly more saturated.

I did change the cartridges in the past weeks, slowly, 1 by 1 ( not all the same time ).

My saturaration / contrast were at about 15 / 9.

Now I toned it down to like 10/5 but it's still very saturated. Not sure what happened.

Should I just tone down the sliders in Photoshop? Or is there something else I can do from the printer maybe..

Just a suggestion. Do you have another graphic software program that you can print from? Another words, if you are printing a PNG file, try to print it from Corel or even Microsoft Paint. In some cases, you could have a setting in the graphic software program to do automatic updates. Something could have changed on the profile side of the program that might have altered the output. Trying a different software could help to determine if this is or is not the issue.

My 361's always been at 5/5 contrast/saturation in the advanced tab.

In the main area for ink adjustments
My ink deposit (setting bar for no white underbasing) is 10
Color+White is 5 highlight, 3 mask, but I hear this varies depending on conditions sometimes.

On photoshop's print dialog, for color management I tell it to let the printer manage the color.

I haven't had any problems with these settings, might want to give them a whirl and see how it acts. I've never really experienced any sort of color difference between cartridges, but I've always used them before their expiration date (only time I came close was with my 541 when I first started up).

One thing I do hate about Photoshop though is it seems to have selective random memory about print settings. It really annoys me when I'm doing things such as printing photos for people on glossy photo paper, sometimes it keeps which printer to use, sometimes it doesn't, sometimes when it does keep it, it doesn't remember the paper settings, sometimes it does, you tell it you want 10 copies, you'll get 1, then you'll have to repeat the whole process over again. I don't even bother trying to gamble with it anymore and double check everything before I hit the print button.
