Default simulated process seperations

Hi could someone give me a little advice on where to start with simulated process separations. I use photo shop and know how to separate process work and also spot colours the problem is I don't know where to start with simulated process. A friend of mine bought a black rolling stones t-shirt that was a photo realistic image of the band made up of 5 or 6 spot colours with halftones. I have a photograph of my son and wanted to know how to change it into spot colours I don't even know where to start. I tried selecting certain flesh tone colours using the eyedropper and changing them to pantone spot colours but the problem is because it's a photo there is about 100 different flesh tones and you lose all the shading and definition am I going about this the wrong way is there a filter or something I need to do to convert the image into spot colours. I bought a book cs3 for screen printers but there is very little info on the subject. I do understand that how to seperate colours its just that i dont know how to take a photo realistic image and convert them into spot colours.

It's best to use an automated plugin for simulated process. The process is very tricky and takes a lot of steps and understanding of using channels. Not something easy to jump in to. Takes a lot of practice and trial and error.
I have used fast films, wilflex easy art, and quick seps. All will do the job. The underbase screen is the most important and must have the greatest amount of detail and gradient smoothness.
