I've noticed that also but to my knowledge...they are the same shirt...just a different tag. I think they changed the tag design a while back.
The Ultra is a 6.1 oz 100% cotton shirt. The next one down is called Heavyweight (without the word Ultra) and it is a 5.5 oz 100% cotton shirt.
Besides the weight of the cotton, I've noticed a big difference is sizing between the two. The Ultra's run bigger than the Heavyweights (and most other shirts for that matter).
