I am getting int he DTG world and intend to offer transfer numbers on the back of shirts. As I look at some of the suppliers I see vinyl and plastisol.
What is the difference?
Is one easier to apply or does one tend to last/wear better?

Well, if you want to use #'s 1-6, you can't cause i have a trademark on them.
I would say for numbering, vinyl will be the best. It doesn't have the best hand (feel), but will be the easiest to apply, in most situations. You can by pre-cut vinyl, or purchase a cutter and rolls of vinyl to expand your possibilities.
I would go with all DTG or all plastisol or all vinyl. Looks good to stick with the same printing style on all of the garments.
Like for just T's DTG is nice, no hand and lasts well. On jerseys go with vinyl, looks like the pro's. Transfers will work on either, depends on quanity for them, med hand and can get the ones that look embroidered...

Oh and vinyl on anything tends to outlast the garment, DTG will fade, and transfers can last a long time as well but will fade/wear depending on transfer type. Embroidery looks best on jerseys I think but not sure if you do that as well.....GL
