If you are using opaque transfer, the white of the transfer itself will transfer on to the shirt as well, though many people don't like using these transfers because they are generally of lower quality.
I guess if you want white to print on a grey or light shirt, you have to send out for plastisol transfers that are screen printed? Or just the opaque? I have heard the opaque are not the greatest quality. I did get a sample from a company that had white on it and it transferred very nicely and was very soft. Unfortunately, I got messed up and didn't write down what company the sample came from.

Sounds like you may have gotten a pre-made transfer, as opposed to somehting you can do custom.
In addition to plastisol, you might also look into a vinyl cutter, which can also cut white vinyl out to apply to a shirt with good results.
