I'm going to be starting my business soon and I would like to know if the feel of a iron on a tshirt is the same with transfer sheet.

your question is not clear...do you mean is the image by iron on...(using house hold iron) the same as made with a heat press? Probably not as even, not as good, and won't last as well.. because you cannot get the even constant pressure over the entire image for the specified time...Just not a commercially viable product.
The iron on and the heat transfer both use transfer paper...just a different type...usually..
I mean the rough feeling on the shirt from the iron.

if you have rough feeling from the shirt then the transfer doesn't make it softer. The feel of the transfer is based on which transfer you use and there are many. So you question leaves out the type of shirt you are using. I would tell you as Charles said using a home iron is not a professional approach or solution.
