Default Adobe Illustrator for those who are familiar with Photoshop [?] Question (cutting objects)

Hello, dA, I have a situation here.. I am attempting to learn how to cut objects as you can do in PS.

Photoshop example/method:

Say there is an object in the middle, and text is typed behind (huge font) the object. I want the text to be deleted (or covered up) so that there appears to be a [ # px ] gap in between the object and the text.

I would do this:
- Select object
- Select>Modify>Expand [ #px ]
the selection is now enlarged, and is #pixels away from the original selection of the object
- Delete



Now if I were to attempt to do this in Adobe Illustrator, how is this done without just creating an overlay in between the text and the object? This would require too much precision with the pen tool to achieve a clean look.

Select your front object.

Goto Object>Path>Offset Path..., here you will enter the number to offset the path (ex: 10 pt). It will create another object set off the number you give it.

Shift click on the text in the back.

I use the Pathfinder palette, click on "Subtract". This will take the front most object and knock it out of the rear object.

If you are happy with it, then click on expand.
